Coconut Chutney

A cooling South Indian chutney made from desiccated coconut, coriander and lime. Delicious with idly or dosa, and a great accompaniment to a larger curry spread.

Coconut Chutney

Ingredients

  • 30g desiccated coconut
  • 10g bunch of coriander, roughly chopped
  • ½ lime
  • 1 tsp sugar
  • 1 tsp Methi Blend
  • ¼ tsp salt

Method

  1. Soak the coconut in 100ml freshly boiled water from the kettle for 10 minutes.
  2. Blend the soaked coconut (including all the soaking liquid) with the coriander10g bunch of coriander, roughly chopped, juice of the ½ lime½ lime, sugar1 tsp sugar, 1 tsp Methi Blend1 tsp Methi Blend and ¼ tsp salt to a coarse paste, adding a splash of water if necessary.
