Coconut Chutney
A cooling South Indian chutney made from desiccated coconut, coriander and lime. Delicious with idly or dosa, and a great accompaniment to a larger curry spread.
Coconut Chutney

Ingredients
- 30g desiccated coconut
- 10g bunch of coriander, roughly chopped
- ½ lime
- 1 tsp sugar
- 1 tsp Methi Blend
- ¼ tsp salt
Method
- Soak the coconut in 100ml freshly boiled water from the kettle for 10 minutes.
- Blend the soaked coconut (including all the soaking liquid) with the coriander10g bunch of coriander, roughly chopped, juice of the ½ lime½ lime, sugar1 tsp sugar, 1 tsp Methi Blend1 tsp Methi Blend and ¼ tsp salt to a coarse paste, adding a splash of water if necessary.
